我以前很不喜歡Tiramisu。
在飯店裏點過,也從Costco和Trade Joe's買過,但一直是興趣缺缺, 從來沒有要自己動手做的衝動。
一次請客, 朋友帶來了她做的Tiramisu。我嚐了以後,立刻改變了看法。J這個方子做出的Tiramisu不甜不膩,味道淳厚,奶味香濃, 口感輕盈。隱隱的咖啡和酒香,更是恰到好處。這個甜點我家一家大小都喜歡,也很出乎我的意料。從做這個點心也學到一課,就是頭腦要開放 (be open-minded),不斷嚐新。不然就會錯過好東西了~
原方是英文的。 簡單翻譯一下。
Ingredients:
2 shots Espresso (2份Espresso咖啡)
Some Bittersweet Chocolate( ¼ inch of cube) (一小塊巧克力)
1 tbsp Kahlua Liqueur (一大勺Kahlua 咖啡酒)
1-2 tbsp Rum (一,二大勺郎姆酒)
2 pack of lady fingers (兩份手指餅)
7 Egg yolks (raw) (七個蛋黃)
½ cup sugar (半杯糖)
8 oz Mascarpone Cheese (8 oz Mascarpone 乳酪)
2 cup of heavy cream (兩杯鮮奶油)
A little bit vinila extract(少許香草精),
2-3 tsp sugar for whip cream (2-3小勺糖,用於打發奶油)
Some unsweeted coca powder (少量無糖可可粉)
Directions
1. Mix Espresso , Chocolate and Kahlua Liqueur together and set aside. (You may need to warm up the coffee to melt the chocolate) (融化巧克力,和Espresso,咖啡酒混合待用)
2. Add sugar to egg yolks and beat until the sugar melt.( Use a double boiler or put mixing bowl over hot water) (蛋黃加糖打至糖融化。盆子隔水加熱以助融化。).
3. Add Rum, Cheese to the egg yolks, mix until smooth(about 1-2 minute)(把郎姆酒,奶酪加到蛋液裏攪拌一兩分鍾至均勻)
4. In another clean bowl, add 2-3 tsp sugar and vinila extract to heavy cream, beat the heavy cream until hard peaks form.(另取一幹淨盆,加入香草精和2,3小勺糖, 將奶油打發)
5. Fold the whipped cream to the egg/Mascarpone mixture. (把打發好的奶油和蛋黃奶酪翻拌均勻。)
6. Lay lady fingers in a glass baking dish (8x8x2 square dish)(將一半手指餅排放在烤盤裏。)
7. Brush lady fingers with expresso/chocolate mixture.(手指餅上刷上咖啡巧克力溶液。)
8. Spread half of egg/Mascarpone mixture on the lady finger.(倒入一半的蛋奶酪混合物, 抹平。)
9. Lay another layer lady fingers, brush with coffee mix.(排放另一半手指餅)
10. Spread the rest of egg/mascarpone mixture.(倒入另一半的蛋奶酪混合物,抹平)
11. Let it rest for 12-24 hours in the refrigerator.(放到冰箱裏冰12-24小時)
12. Sift the coco powder on top before serving(吃前撒上可可粉)
13. Eat!!!!!(吃吧!!!)
先看看成品吧:
原料(順時針方向):手指餅Lady fingers, 鮮奶油,奶酪
原料(從左到右):郎姆酒,咖啡酒, Espresso咖啡
Starbucks 店裏賣的Espresso一份叫1shot (One shot is equal to one ounce)。
要味道好,最好是現做現去買。
我試過用速溶咖啡代替,味道差了太遠。
Mascarpone cheese Trader Joes最便宜, $2.99/8oz. 最好不要用Cream cheese替代,味道會很不同哦。
手指餅多數美國超市都有賣,一般放在Bakery 附近。找不到就問店員吧。
巧克力我用的是Trader Joes 的比利時黑巧克力(Belgian Pound Plus Dark Chocolate) 。
進冰箱前:
冰一晚拿出來撒上可可粉.
可可粉撒得太多了。自己做東西就是這樣,原料象不要錢似的~~
這個點心熱量較高,建議和朋友分享。
想自己獨享的話,可冰凍起一部分。解凍後和現做的一樣好吃。
注:這個方子裏用了生雞蛋,一般人吃了都沒問題的。
但孕婦,嬰孩,老人和體弱者最好不要吃。
手指餅買不到的話,可以自己做。方子如下:
Homemade Lady Fingers
Ingredients
- 2 tablespoons butter
- 3/4 cup plus 2 tablespoons sifted cake flour
- 4 egg yolks
- 1/2 cup sugar
- 4 egg whites, beaten until stiff
- Pinch of salt
- 1 teaspoon powdered sugar for dusting
Directions
- Preheat the oven to 350 degrees F.
- Grease and flour 2 baking sheets with 2 tablespoons butter and 2 tablespoons of flour.
- Mark parallel lines in the flour across the width of the tray about 4 inches apart.
- Put the egg yolks and sugar in a large mixing bowl, and with an electric mixer fitted with a wire whisk beat on medium-high speed until the mixture is pale yellow, thick, and has tripled in volume, about 8 minutes, using the mixer.
- Add the beanten egg whites, remaining 3/4 cup flour, salt and vanilla, fold to mix thoroughly so the mixture is smooth.
- Fill a large pastry bag with a 3/4-inch plain tube with the mixture.
- Pipe fingers about 4 1/2-inches in length on to the baking sheet, using the lines as a guide.
- Dust the ladyfingers with powdered sugar.
- Bake for 15 to 18 minutes, or until just firm on the outside and soft in the center

再上幾個家常小菜。 蔬菜都是自家種的
芙蓉蝦仁
是用做提拉米蘇剩下的蛋白做的。
無頭大蝦去殼,沙線洗淨。加料酒,鹽,胡椒粉,生粉拌和醃漬5分鍾。蛋白加鹽 打勻備用。以大火炒蝦仁至變色,淋入蛋白液,至蛋液凝固即可。
小竅門: 蝦仁從背部深剖一刀,不要切斷。炒後就會卷成很好看的蝦球。

地裏的一個小南瓜未及長成, 瓜藤就斷了。采來連皮切成丁。用辣豆瓣醬和雞丁一起炒。很爽口下飯.
蒜爆南瓜藤尖
一直都知道南瓜藤尖可以吃,卻從來沒試過。從地裏采了一把南瓜藤尖(LD見了急得嗷嗷直叫~~),手撕刀刮,花了半小時的功夫,才把藤上的毛給弄幹淨。用蒜爆炒了。
嗯,味道啊,不如我想像的好吃。有點苦。不如佛手瓜的藤尖好吃。
