Name: Jiaozi (Triple Delicious Dumplings) 三鮮餡兒餃子
Jiaozi is a common food for Chinese people, especially for the northern part of China. It is one of the biggest event during Chinese New Year eve while family members get together to make Jiaozi.
Things you need:
食材 Ingredients for fillings:
一磅豬肉餡 ground pork 1 lb |
兩大勺料酒 2 table spoon cooking wine |
半棵白菜 Half Napa cabbage |
三大勺醬油 3 table spoon soy sauce |
三個雞蛋 3 eggs |
兩小勺麻油 2 tea spoon sesame oil |
半杯鮮蝦仁 ½ cup peeled raw shrimp |
一大勺蔬菜油 1 table spoon vegetable oil |
兩根青蔥碎 2 green onion, chopped |
一茶勺鹽 1 tea spoon salt |
一小塊生薑 1 small piece of fresh ginger, chopped |
半茶勺胡椒粉或蒜粉 ½ teaspoon pepper powder or garlic powder |
Procedures:
For wrap:
5 cups of all-purpose flour. Bread flour is preferred.
Water: About 2 and ½ cups. Note: Depending on types of flour, you need to modify the amount of the water. The dough should be like a pizza dough. Not too soft nor too hard. Let the dough sit for about an hour. Then knead the dough for five minutes. Cut the dough into four equal pieces. Knead again. Roll it to be a long roll. Cut it into the small pieces. Rolling the small piece into the round wrap (See the photo).
Note: You can buy ready made wrap from Chinese grocery stores.
For fillings:
Step one:
Put ground pork in a big bowl. Add 2 table spoon cooking wine, 3 table spoon soy sauce, 2 tea spoon sesame oil, 1 tea spoon salt, diced fresh ginger, and green onion. You can add ½ teaspoon pepper powder or garlic powder, too. It is optional.
Stir the meat in one direction until all the ingredients mixed. You need to do this first to let the flavor into the meat.
Step 2:
Beat three eggs, heat the pot with 2 table spoons vegetable oil. Pour the egg liquid in the pan and stir it in a circle with fast speed until the egg liquid forming into tidy pieces. Let it cool in stir fry pan.
Step 3:
Prepare the Napa cabbage. You can use the food processor to chop it or do it manually. Put a little bit salt to get the water out. Squeeze the chopped cabbage to get rid of the extra water out. Put dried chopped cabbage in the stir-fried pan, Mix the cabbage with the egg. The oil there can seal the cabbage to maintain the juice within.
Step 4:
Chopped the shrimp and put them into the meat bowl. Mix it with marinade ground pork. Add cabbage and egg mix to the bowl. Mix everything in one direction.
Note: Keep mix things in ONE direction!
Now you have the wrap and the fillings. It’s the time to make jiaozi.
Place the wrap in one non-dominate hand, use chopsticks to put the filling in the center of the wrap. Press it. Fold the wrap and then connect both edges into one.
