材料:冰過的米(在私房學的), 鹹豬骨,皮蛋
煮滾水,下冰過的米, 鹹豬骨,煮至糊下皮蛋再煮15分鐘即成.

材料: 米粉,叉燒,蝦仁,椰菜,甜椒或辣椒,雞蛋,咖哩粉,雞粉,鹽
米粉用熱水燙軟,雞蛋打過煎香切絲,熱鍋下油,爆香咖哩粉,下米粉炒勻,下鹽炒勻,在另一個鍋,炒好叉燒,蝦仁,椰菜,甜椒,下雞粉,鹽調味,把炒好的米粉菜混合調味即成.

京都吃懷石料理


有人問我科普一下懷石料理,我也不知道什麽是真正的懷石料理,所以才去試,看看懷石料理的真麵目.

• 大媽能不能解釋一下啥叫懷石料理? -ciccina- ♀

我知道懷石料理的來曆,也知道它是一種高檔日餐,選材精良、製作精致、餐具古樸,可到底啥叫懷石料理,我在日本住了兩年也一直沒搞明白。比如大媽做的這些東西,這麽多樣要做出來當然是很費功夫,不過好像和我在日本飯店吃的也差不多啊。難道懷石料理就是分量格外小一點,presentation更空靈一點?

之所以想問因為我日本老板告訴我懷石料理和一般的會席料理完全是兩種不同的東西,懷石料理一般日本人根本吃不起的。但問他們到底咋樣,好像也說不出個道道。大媽是不是研究過什麽書的?可以給我們科普一下。


我們去這家懷石料理是2 start Michelin, 要預定,二天前就請酒店員工幫我們定下了.
這家懷石料理,有三個價的,如:大,中,小.我也不知道是什麽意思,(好像電話order時已問了,我順口就說要大的).

有人也去世博會吃了懷石料理.
