提起吃川菜，在川菜館裏，大家認為哪幾道菜能說明這個川菜館是否正宗？

我覺得這幾道菜做得好不好很說明問題：

有人會說水煮魚/水煮牛，但水煮魚/水煮牛基本每個店都能做好。
