派皮
1:低筋麵粉(cake & pastry flour)1又1/2杯(210克),鹽1/3茶匙,泡打粉(baking powder)1/3茶匙,紅糖1.5大匙(brown sugar,15克);
2:冰箱冷藏牛油(butter)1/4杯(60克),冰箱冷藏油酥1/4杯(lard,60克);
3:蛋黃一個,白醋1茶匙,冷水3大匙左右(55克);
派上層的酥碎:
7:低筋麵粉(cake & pastry flour)3大匙(25克),紅糖1大匙(10克),牛油1大匙(15克)。
派餡:
4:Gala蘋果6個;
5:紅糖1/2杯(100克),低筋麵粉(cake & pastry flour)1/4杯(35克),1茶匙肉桂粉(ground cinnamon),1/3茶匙肉豆蔻粉(ground nutmeg);
6:檸檬汁2大匙,水4大匙;
2 1/2 cups a.p flour
