酸甜清香的Lemon Meringue Pie

        昨天去市場買菜,見檸檬好新鮮和便宜,便買了一包回來,做我喜歡的Lemon Meringue Pie。先去網上找到個方子,見有近300 人review,評了4 個半星,應該不錯。立馬動手,原材料簡單,家裏有現成的,過程也不複雜,一個多鍾頭就大功告成了。先在室溫下放了一個多小時,然後放到冰箱裏3個小時後,再蓋上薄膜紙放到冰箱裏過夜。第二天一早,迫不及待的從冰箱裏端出來,除了Pie的高度降低了以外,其餘的看起來是perfect,切下一塊裝盤試試味道如何,酸甜細膩,帶著檸檬的清香,又一個perfect !!! (自己給自己給力哈!)女兒說好吃,LD吃了以後沒有批評,我認為,沒有批評那就是表揚。

原方子及做法:
Grandma's Lemon Meringue Pie

Ingredients
1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar

Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
3. To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
4. Bake in preheated oven for 10 minutes, or until meringue is golden brown.

我做的改動:
1. 我用的是10英寸的烤盤,想要餅厚一些,我多加了一個雞蛋。
2. 匆忙中忘記放Butter了,沒覺得有什麽不好的,正好還不想放呢。既然對味道沒有影響,以後就不放了。
3. 今天買的檸檬個子算中等,我拿了5個擠汁。我覺得酸味濃了一點,下次可以用3-4個就行了。
4. 做baked pastry shell,把pastry shell放進420F 烤箱裏烤12分鍾或成金黃色即可。

自己做的餅,吃起來健康,更開心!
