女兒做的 Chocolate Pixies

         以前,都是我做這款好吃的軟餅幹給女兒吃。不僅女兒喜歡,我也很喜歡。喜歡它鬆軟濕潤的口感,喜歡它巧克力的馥鬱香甜。做起來不難,成分簡單且營養健康,何樂而不為呢?
       兩個星期前的一個星期六,女兒說,她們relay for life 的 team 要自己做點心義賣籌款, 問我做什麽好,我就建議她做這款好吃的,且市麵上又沒有賣的軟餅幹(soft cookie)。女兒不讓我幫忙,自己忙了一晚上,做了5 打,一個沒留全部打包。第二天高高興興地拿出去賣了。
        昨天,是 Martin Luther King, Jr. Day, 不要上學,等女兒做完了作業,我問女兒能不能再做些軟餅幹給我們自己吃,女兒欣然答應。立馬動手,又做了5 打。
       今早起來,拿了兩塊餅幹,倒上一杯牛奶,坐到桌前,咬一口餅幹,口裏溢滿了餅幹的香甜,心裏蕩漾著女兒濃濃的愛意……



Chocolate Pixies

Ingredients:

4 Tbsp. butter
4 1-ounce squares unsweetened baking chocolate
2 cups all-purpose flour
3/4 cup sugar
4 eggs
2 tsp. baking power
1/2 tsp. salt
1/2 cup chopped walnuts or pecans
Powdered sugar

Directions:
1. In a 1-quart saucepan melt butter and chocolate over low heat, 8 to 10 minutes, cool.
2. In a larger mixer bowl, combine melted chocolate and all remaining ingredients except 1 cup of the flour, the nuts and the powdered sugar. Beat at medium speed, scraping bowl often, until well mixed, 2-3 minutes.
3. By hand, stir in remaining 1-cup flour and nuts. Cover refrigerator until firm (2 hours or overnight) Heat oven to 300 degrees. Shape rounded teaspoons of dough into 1-inch balls; roll in powdered sugar. Place 2 inches apart on greased cookie sheets. Bake in preheated over for 17 minutes or until firm to the touch.
