2 8 oz Ambrosia Cream Cheese Spread
1 Tbsp milk
1/4 cup sugar
2/3 cup plumped dried cranberries
1 20 oz crushed pineapple, drained squeezed dry
1 11oz mandarin oranges drained, dried
3/4 cup coconut, toasted, divided
1/2 cup chopped pecans
combine sugar, cream cheese. Stir in a little more than half the pineapple, oranges, cranberries, coconut, and all of the pecans. Mold into rectangle on serving plate and top with remaining fruit and coconut. Chill
Spread this on toast or bagels for breakfast, on bagel chips for a snack, or serve with whole grain crackers for an appetizer.
