If the conversion is within the squarfootage,  when the appraiser comes, you should be there and ask them to erase the wall lines between the rooms so that the room number will match the county record.

 

The best way is to figure out the zoning requirements for the property, and keep it up to date by finishing the incomplete permits.  Once it is done, this will increase your appraisal value and you can cash out more. 

If it cannot be permitted, you know what to hide ... :)
