What is Jianbing? crepes? seems alright. What is Guozi? bread sticks? doesn't look like, What is its English name? Who cares, everyone knows what guo zi or you tiao is, There is no such thing in English spoken world, no English name. Just call it Guozi, as a loanword like Samosa, Sushi. It is guozi, no argument.
It is said that traditional jianbing batter only use millet flour, the milled millet crop seeds, but there is nowhere to find it. So I adopted another recipe using wheat flour, green bean flour, soy bean flour at 2:2:1, hoping the beans flour can add crisp in the jianbing.
Casting iron pan, low to medium heat, pour the batter, spread it quickly, make it as thin as it can be, after the jianbing starts taking shape, pour an raw egg over and then scatter green onion chops and sesame seed right away, so they stick into the egg beaten. Wait till the egg white begins turning white so the egg won't drip, then carefully turn the jianbing over to let the egg fully cooked,
take the finished jianbing with the egg side face down, smear sweet soy jam on the top surface of the janbing, wrap the guozi, done, ready to serve
or fold it over, making it more like we once bought from the street food cart.
