My humble 2 cents about "What would you do if your manager gives you too much work"?
--Those sort of questions make everyone a loser.
Assumed this is the solo interview question and once you passed, you got the job:
Senorio one: You failed the question, you failed the interview. Conclusion: you are a loser.
Senorio two: You passed the interview. And you got the job! Congratualtion! But wait. Then you will have to stay in a working environment that you will be over-loaded and under-paid, which eventually makes you a loser. Again!
If I went for an interview and I was asked with a question like this, I was alert that there maybe a serious problem in the team. Why is some one over loaded? Is it because of short of people? Is it because of bad management? Or is it because of financial dificulty? Whatever answer is doesn't make this company a competitive potential employee for me.
I would walk out of the door and never make my way back!
