法式鄉村魚湯, 麵包晚餐

那天看武生先生的法國棍子麵包的貼, 就心動了, 又有信心來做好吃的麵包. LG一直愛吃這種外殼硬脆, 內部柔軟有勁, 很lean (vs. rich) 的麵包, 做過很多次了, 總還是不十分滿意, 馬上就試了一下, 還是用了我用過的配方, 但采納了他的一些竅門.

覺得是有進步了, 隻是還希望看到內部的氣泡更大,


法式鄉村麵包

引子(poolish):

½ c 水,
1 c bread flour
1/16 tsp yeast

麵包:

All of the poolish
1 tsp yeast
3 ½ c bread flour
1 ¼ c water
1 tsp salt


前一天做哪個引子, 第二天用引子來加在麵裏, 我是用麵包機來做的, 等麵團兩次發酵後,從麵包機取出, 排氣, 成團, 放入醒麵和成型的木碗裏(proofing basket), 等發到兩倍以上, 反扣在墊了烤紙的pizza peel 上, 灑幹粉, 用快刀畫開, 放在預熱 450F的pizza stone 上, 烤架放最低層, 喜歡黑的可放上層, 烤箱底放一盤, 倒入一杯開水, 烤50分鍾, 麵包內部溫度到210F取出, 放架上冷卻.

一心撲在做麵包上, 臨時把家裏有的材料做了一個簡版的法式魚湯, 一家人吃得很開心,


魚湯

用橄欖油, 炒香洋蔥和胡蘿卜碎, 加香葉, 歐芹, 百裏香, 蒜末, 檸檬皮, 炒香, 加去皮切碎的番茄, 雞湯, 燒滾, 加魚塊和蝦, 加鹽和胡椒, 中火燒開. 撒歐芹碎.
