這款棗泥酥用了兩個人不同的配方組合而成,棗泥餡用的是愛廚的方子,酥皮用的是君之鳳梨酥的方子。我把這兩者結合在一起。大家如果還有剩的月餅餡,都可以用來包。

我買的幹棗是有核的,所以是煮好後再去皮去核。做法唯一有點不同的是棗子去皮去核後我沒有把棗泥放回水裏再煮,而是直接把棗泥加糖炒。愛廚的配方鏈接:

棗泥餡 15克,麵皮 20克(長方模具)或者
棗泥餡20克,麵皮20克(橢圓模具)。
用皮把餡包好,放入1” 高 x 1 ¼” 寬 x 2” 長的模具中。做好12個,放入350F烤箱中烤15分鍾左右(根據自家的烤箱調整)。
我用的長方形模具是35克/個, 橢圓形模具40克/個 (不鏽鋼模具是fat daddio's 牌子)
