People who have done low-carbohydrate and high protein become carbohydrate sensitive:
hence the body’s insulin response becomes ineffective due to prolonged low-carbohydrate dieting
Blood sugar levels rise too quickly, and as a result your body doesn't respond to insulin
Then the excess carbohydrates are stored as fat and your body fat % increases

Carbohydrate Sensitivity
Your body prefers carbohydrates, but not the ones that raises are blood sugar too quickly. Such as white four, white rice and sugars low in fiber and lacking nutrients. These type of carbs  makes your blood sugar rise too quickly, and your body does not respond to insulin optimally. Instead of being used for energy, carbohydrates are stored as fat, and as a result your body fat goes up. When you eat these type of carb your body converts it into glucose too quickly and insulin is also released quickly instead of escorting the glucose to the muscle it stores it as fat.
When you eat a complex carbohydrate, such as beans, lentils, oatmeal, or apples, full of finer and nutrients your body breaks it down into glucose slowly, and insulin is also released slowly-a form of time released energy.  Your body can normally handle occasional overloads of simple carbohydrates and store them as extra glucose rather than fat. But many people have abused their systems for so long –through either simply eating too many refined carbohydrates or the factors discussed  –that their bodies learn to go against nature. Their metabolisms learn to store carbohydrates as fat, weather it is simple or complex, eaten in moderation or excess. It can get to the point where even a balanced meal of chicken, bread, some potatoes, and a vegetable doesn’t metabolize correctly. You have become so sensitive to the bread and the potatoes that you store most of what you have eaten-even the carbohydrates and protein-as body fat. And if you eat a piece of bread or a small plate of pasta, your body will react strongly as if you had eaten a piece of cake and send your insulin levels soaring.
This condition is called carbohydrate sensitivity or as insulin resistance because the cells in your body resist insulin’s efforts s to transport glucose, no matter how much insulin your body produces. This causes more then just weight problems. This is, leads to a diabetic state.
