* 美酒 doesn't necessarily mean a vintage. It could be any wine, regardless its quality. Like the beauty of girls, regardless of their looks in reality, a beauty only exists in the beholden eyes. I guess, that is the point of the writer: you will enter into a whole new world whey you are tipsy.
* If the vintage is the subject of the structure, it can't be tipsy. You still somehow have to add something else there.
* Noun verb always gives a sense of continuous action. Half-blooming suggests the continuous changes of a flower and the voyeur is waiting for that moment, therefore, I think, "half-blooming" is much more interesting than
"half-bloom".
