The REF can be anything, I am not sure what kind format of USCIS's REF regarding to employment verification. As far as I know, while someone switch job during I485 pending, the new employer did try to make sure I485 is portable. If new employer does not want to sponsor I485, seems that I485 is not portable.
Also, based on my understanding, switching job means applicant has another new permenant job to replace his/her previous permenant job for GC. If new employer does not want to sponsor GC, maybe the position is not for GC applicant? I am very sure, just feel potential risk could be there, though it could be little.
