though your I485 have pended for more than 180 days with I140 approved, you still need your new employer to sponsor your GC to make I485 portable. If they say they do not want to sponsor your GC, the potential risk will be there for your GC, though it might be little risk, you need prepare for that worst case.
By the way, if the worst case happen, switch back to F1 is not doable, since you have already shown your immigration intention.
