But you are ahead of me if you are trying to make the Tartine bread, which was not whole wheat, BTW.
When I fancy some good whole wheat bread, I have many choices in the Bay Area.
As for the whole wheat flour, I make it by grinding wheat berries, almonds, and flaxseeds.
It's good for making the Indian paratha which my son loves.
It's tempting, isn't it?
