《本草綱目》記載,紅糖性溫、暖胃健脾、益氣補血、健脾暖胃、緩中止痛、活血化淤的作用。

 注意要點NOTE:

  1. 紅糖水要降溫至35度時方可放酵母,避免酵母燙死。

Brown sugar water need to reduce the temperature to 35 degrees before adding yeast to avoid killing yeast.

  1. 發酵時間要看室溫溫度、室溫低發酵時間要長,常溫(23度左右)要發1-2個小時。

Fermentation time depends on room temperature. Room temperature is low, fermentation time is long. If the room temperature is about 23 degrees, it needs 1-2 hours.

  1. 第一次發酵後、排出氣體後,蓋上蓋子再次發酵至麵糊變大

 After the first fermentation, after removing bubbles, Cover it until it is fermented bigger.

 

準備食材:Preparing ingredients

1、麵粉Flour 200 g

2、木薯澱粉 Tapioca starch 100 g

3、紅糖Brown sugar 80 g (喜歡吃甜的朋友可以多加,You can add more sugar if you like it sweeter)

4、熱開水Hot boiled water 300 ml

5、酵母Yeast 4 g

6、泡打粉Baking powder 3 g

7、無鹽黃油 Melt unsalted butter 25 g
