No case here as two PIPs were performance related. Your boss

must have rated you incompetent. Extremely hard to go around now. Needless to say your boss was extremely demanding, but obviously you couldn't meet his "challenges" (work assignments) and didn't know how to protect yourself professionally when he found faults with you. You should have planned earlier and communicated with his boss when you knew impossible for you to meet the timeline. You should have sent your boss cc his supervisor a brief email highlighting the progresses you've made on the project, the remaining challenges/problems, and resources which you thought are required to get the work done. Before the deadline approached, send another email reminding you are behind...These documents are great proofs to show you're organized and well knowledgable on the project. At least HR would unlikely be sided with your boss easily when these documents are available.
