I will not show the interviewer anything.  The interview should focus on your technical skills and personality - to see if you are a good match for the position or not.  Don't let anything unpleasant shown in the interview.

You can send those letters to people perform reference check/background check, if you don't have anyone for your reference.  You can ask your friends in China to be your reference, put down the company in China on your resume, and tell your potential employer you don't want them to contact the American company.
