It depends.  I had my interview on Monday and got the offer on Saturday.  It was a surprise.  I thought they told me I was overqualifeid and I thought they might not want me. But I have to say in most case, the government job is very slow.  I had another interview even before this one, the offer did not come until two months after I started this position, because they had to get different things approved.
