If you do not disclose your PhD in your cover letter and resume/CV, you have to tell all your references to lie on your behalf. They may look down you thereafter. It's also difficult to pass educational background checkup these days.

On the contrary, should you include your PhD and postdoc in your application, I bet they will pass you.
