餅幹大會 - 新年的祝福

今年我們組裏辦了一次 cookie exchange party, 大家把自己拿手的 cookie 貢獻出來,互相品嚐和交流。老板還準備了很多精美的禮品袋,每人裝滿一袋餅幹“凱旋”回家。

看一眼花花綠綠的餅幹,是不是已經十分甜蜜了?借節日的東風,把部分展品曬出來。

下麵是 cookie swap pictures 和部分 recipes.

1。全景一覽



2。這是 ingredients 最多的健康餅幹 - Cosmic cookies. 俺見過的貌似史上最長的用料方子。 想吃甜點又想健康的就是它了!我們這位同事可是苗條又健康的呦。



俺把方子摘錄如下:

2 1/4 cups quick cooking oats
2 cups spelt flour
1 cup sunflower seeds
3/4 cup + 2 tbsp pumpkin seeds
1/2 cup shredded coconut, unsweetened
1/4 cup flax seeds
1 cup granulated cane sugar
2 1/4 tsp sea salt
1 3/4 (250gms + a bit) dark chocolate chips
1 1/4 cups raisins
1/4 cup water
1/4 cup blackstrap molasses
3/4 canola oil
1 cup soy milk

Preheat oven to 350 F. Line baking trays with parchment paper.

In a VERY large bowl, combine dry ingrediants - evrything from oats to raisins.

In a seperate large bowl, combine wet ingredians - everything from water to soy milk. Add wet ingrediants to dry ingrediants and mix until just combined. Do not over mix.

Portion cookie dough using a 1/3 cup measure and place onto lined baking tray. Gently flatted cookie before baking.

Bake for 24 minutes or until lightly browned. Yields 24 cookies (better to make smaller).

3。 隻用了三種成分的short bread cookies. 這三樣東西是:麵粉、紅糖和黃油。老板提供的。



特簡單, 好吃又好做, 比買的香脆、新鮮。 享受點健康的, 來點黃油又何妨?

方子在這兒:

makes about 80 small cookies, 30 larger cookies 
Preparation time: 15 minutes
cooking time: 12-15 minutes

No Christmas table would be complete without a plate of crisp, buttery shortbread cookies. This recipe is fabulous and is so easy you'll be able to keep the cookie jar toppled up throughout the holidays.

1 cup softened butter  250 ml
1/2 cup packed brown sugar  125 ml
2 1/2 cups all-purpose flour  625 ml

1. Preheat oven to 325 F(160C)

2. In medium bowl, cream butter and sugar until light and fluffy.With your fingertips, gradually work in 2 cups (500 ml) flour, adding more if necessary to make a soft but not sticky dough.Gather dough into a ball; kneaded lightly.

3. Roll out dough on lightly floured surface to 1/3-in (8 mm) thickness; cut into shapes with Christmas cookie cutters.
Arrange 2 in (5 cm) apart on ungreased baking sheets.

4. Bake 12 to 15 minutes, until lighly tinged with gold. let cool on wire racks.

Variation: For spiced shortbread, add 1 tsp (5 ml) each cinnamon and ginger, 1/2 tsp (2 ml) ground cloves and 1/4 tsp (1 ml) grated nutmag on flour before adding to butter-suger mixture.

4。這個我叫不上名,好像是店裏買來的,很漂亮的造型, 不知哪國風味?感覺象東歐的甜品?左邊第一款裏麵夾了餡,有點象月餅裏的五仁餡。 俺拿回家了一個。



5。 Chocolate Haystacks - 俺家小朋友說非常好吃(俺沒吃但拿到了方子),做法超簡單,好像都不用開烤箱哎。過幾天讓小朋友實踐一把。



方子如下:

Ingredient:

2 cups of Corn Flakes (the fresher the better)
2 tablespoons of penut butter
Melted chocolate (approximately 1.5 cups)

Melt the chocolate and peanut butter ( in short intervals and at a lower temperature) in the microwave.

Pour the corn flakes into a large bowl.

Add the chocolate mixture and stir slowly and carefully. Add more chocolate if not enough to cover or more cereal if too much chocolate mixture.

Once everything is coated, spoon into "stacks" onto a cookie sheet covered with waxed paper. 

Place in refrigerator until hardened and transfer to a sealed container.

6。 這個應該叫 Oatmeal Cookies with dried Apricots and White Chocolate ? 猜的, 希望對號入座沒有搞錯。



方子比較長:

Instead of old-fashioned oatmeal raisin, swap in apricots and white chocolate. the white chocolate's sweetness tempers the tang of the fruit, creating a balanced batch that will appeal to kids and adults alike.

Yieds about 4 dozen

Ingredients

1 1/2 cups all-purpose flour
1 1/2 cups old fashioned oatmeal
1/2 teaspoon baking soda
8 ounces (2 sticks) unsalted butter, softened
1/4 cup granulated sugar
1 cup packed light-brown sugar
1 teaspoon salt
1 teaspoon pur vanilla extract
2 large eggs
8 ounces white chocolate, chopped
7 ounces dried apricots, preferably Canifonia, chopped (1 1/2 cups)

Directions

1 preheated oven to 350 degres. Mix flour, oatmeal, and baking soda in a medium bowl. Cream butter and sugars with a mixer until light and fluffy. Reduce speed to low. Add salt, valilla, and eggs, and bat until well combined, about 1 minute. Add flour mixture gradually, beating until just combined. Stir in chocolate and appricots. Cover, and refrigerate until cool, about 30 minutes.

2. Drop heaping tablespoons of dough onto parchment-lined baking sheets, spacing 2 inches apart. bake until cookies are golden brown around the edges but still soft in the center, 14 to 16 minutes. Let cookies coll on baking sheets for 2 minutes. transfer cookies to a wire rack, let cool.

7。這個不知叫啥? 感覺是cheese 口味的。沒拿到方子也不知味道如何。

12。 Dates squares。 帶回一塊, 還沒拆包呢, 估計甜度很大。



13。老板準備的各式小零食,後麵那筐裏的是烘烤的各種健康薯片、紅薯片等等,俺就守在這兒吃。 老實坦白:俺餅幹就吃了一小塊,主要在啃那些不是餅幹的東西了。還有一個重要的吃點在下麵。



14。 Mini samosa - 太好吃了,俺就不停吃這個。這不是甜點, 是鹹點, 用了filo pastry sheet包的 。俺要山寨這個。



15。還有這個,也是這位大哥帶的:油炸土豆片和茄子片,旁邊還準備了蘸料sauce。非常好吃。



16。 這位老兄就用這個充數了?從樓下店裏買來的。



17。眾所周知的 Chocolate cookies。 好像有好幾盤類似的餅幹, 俺手頭拿到一個Chocolate Crackle Cookies 的方子, 估計不是這個。 俺搞岔了, 大家不要對號入座。



Chocolate Crackle Cookies

Ingrediants:

8 ounces bittersweet chocolate, melted and cooled
1 1/4 cups all-purpose flour
1/2 cup Dutch cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, room temperature
1 1/3 cups light-brown suger, firamly packed
1 large eggs
1 teaspoon pure vanilla extract
1/3 cup milk
1 cup confectioners' suger, plus more for rolling

Heat over to 350 degrees. chop bittersweet chocolate into small bits, and melt over medium heat in a heat-prrof bowl or the top of a double boiler set over a pan of simmering water. Set aside to cool. Sift together flour, cocoa, baking powder, and salt.

In the bowl of a heavy-duty electric mixer fitted with the paddle attachment, beat butter and light-brown suger until light and fluffy. Add egg and vanilla, and beat until well combined. Add melted chocolate. With mixer on low speed, alternate adding dry ingrediants and milk until just combined. Divide the dough into quarters, wrap with plastic wrap, and chill in the refrigerator until firm, about 2 hours.

On a clean countertop, roll each portion of dough into a log approximately 16 inches long and 1 inch pieces, and toss in confectioners' sugar, a few at a time. using your hands, roll the pieces into ball shape. If any of the cocoa-colored dough is visible, roll dough in confectioners' sugar agin to coat completely. Place the cookies 2 inches apart on a Silpat-lined baking sheet. bake until cookies have flattened and the sugar spits, 12 to 15 minutes.

Transfer from oven to a wire rack to let cool completely. Store in an airtight container for up to 1 week.

18。最後閃亮登場的(同事來晚了),卻帶來一片驚豔, 掀起本次活動的高潮。據說 recipe 是 grandma's secret, 而且 Grandma 親自純手工打理。 真是漂亮,反正俺是毫不客氣地往禮品袋裏塞了一個。觀賞價值高, 也很應景的說。



其實我們還有位烘焙高手因為maternity leave (休產假)缺席了,她說明天會(她每年都這樣)送來她家每年一次的傳統烘焙產品。很期待哦!
