上一節談到正式的全套餐點,事實上大多數情況下,沒有必要全部都點,點太多卻吃不完反而失禮且浪費。一道前菜、一道主菜(魚或肉擇其一)加甜點是最恰當的組合。點菜並不是由前菜開始點,而是先選一樣最想吃的主菜,再配上適合主菜的湯或者前菜。比方說如果你點的主菜中有蔬菜,前菜可以選一道開胃點心,而不必點蔬菜色拉;如果你的主菜是肉類,選一款海鮮濃湯則豐富了口味。 稍有水準的餐廳都不歡迎隻點前菜的人。
但在餐廳裏,可選擇的菜肴實在太多,會人眼花繚亂,不知從何入手。我的體會是抓住特色。很多餐廳都推出每日、每周或每月特色菜,在開始翻閱那厚厚的菜單之前,可以先看看當日有什麽特色菜,如果該菜的配料你都可以接受,可以嚐試一下。而且特色菜有時比較便宜。對餐廳招牌菜事先有耳聞,那麽你首先要品嚐的一定是餐廳的拿手大餐——招牌菜,它會使你不虛此行。

有時也可參考他人意見,也許同你前去的朋友中有人來過這家餐廳,不妨聽聽他們的意見。當然,詢問餐廳服務員業是個好辦法,你講出喜歡的味道,他或她就一定能給你說出幾個可供你參考的菜名。如果服務員不是很忙,他們通常很喜歡聊天。
在餐廳,你如果作為被邀請的客人,有時可能會在點菜時不很輕鬆,或許是因為價位,或許是因為口味。出於禮貌,避免點那些價格昂貴的菜肴,但也不要隻盯著那些價格較低的菜。你既然是被邀請的客人,那麽主人也當然希望你能在用餐方麵有所享受。所以,按照你的口味,選擇價位適當的菜類就可以了。
還有一個小建議:如果不常吃西餐,麵條類的東西最好免點。記得一次我點過一道蒜蓉雞肉,搭配的主食是意大利麵,這道菜點得很糟糕;一是蒜的味道太大,二來那寬麵條很滑很筋鬥,用叉子插不起來,卷到叉子上又很麻煩。沒吃上幾口,隻好打包回家了。好在是朋友們小聚,大家都很熟,我打趣說以後吃西餐麵條,我要自備筷子。前不久,吃過一次點的是油炸大蝦,主食是土豆泥,配有菠菜胡蘿卜和蘑菇,很可口呢。
還要談談工作午餐(Business-Lunch),這種進餐是為了談買賣,做生意。在辦公室那種枯燥刻板的環境下不便商談的事,有可能在飯桌上很輕鬆地通過。所以,進餐不是目的,而談業務才是用餐的主旨。
省時:工作午餐進餐時間同晚上相比要短些,再加上大都以談話為主,所以工作午餐以精簡為好。一般隻有一道前菜、一道主菜和甜食(或咖啡)。酒水方麵,為調節氣氛,如果事先知道對方喜歡飲酒,不妨點上一瓶,對交涉、商談更有幫助。
講禮節:雖然你的業務夥伴不會把你請的這頓午飯是否破費作為評價你的標準,但你的安排可從一個側麵可以反映你的辦事態度和能力,其中涉及到預定桌位、套餐的安排、餐桌上禮儀、主動結帳,等等。既然被請方是你的客人,那麽你就應該以禮相待,遵守客人優先女士優先的規矩。(如果客戶中有女士的話,女士在這種場合也應享受優先待遇)。
點餐和結帳:在詢問清楚客人的胃口和喜好之後,你應該點餐、品酒。進餐時,你要時時給予照應。了解飯菜是否合口,主動問客人是否要添加飲料等。
