西餐的上菜程序

西餐正餐正式的全套餐點上菜程序通常是:麵包黃油(Bread & Butter)→前菜:包括開胃點心(Appetizers)、蔬菜色拉(Salads)、海鮮(Seafoods) →湯(Soups )→主菜(Entrees)→餐後甜點心(Desserts)→咖啡,茶和水果。相應的酒包括餐前酒(開胃酒)和餐酒。

麵包黃油通常在客人落座後很快就上桌了,每個餐廳都有自己獨到的東西 麵包裝在襯有餐巾的小筐裏或大盤子裏,外加一小盤造型靈巧的黃油。我曾經在普林斯頓的一家餐廳吃到全麥粉烤製的酸麵包,搭配的黃油一顆顆做得像乳白色的仿古鈕扣。聽說這家餐廳因此有一些老顧客。而在埃文思維爾一家吃到了香噴噴熱乎乎剛出爐的萱軟奶油小麵包,那黃油象一朵朵白色的小野菊。

前菜(這是我的翻譯方式,一些資料裏翻作冷菜或頭盤菜)通常可細分為:開胃小菜(Appetizers)稱為第一道菜(也叫頭盤菜—the first course)。色拉(Salad)稱為第二道菜(the second course)。上文提到開胃小菜的英文Appetizer是美式用法。英式用法是Entrée, 而英式用法中主菜用Main。湯(Soup )也是在主菜之前上桌的。湯分漬湯和奶油濃湯,漬湯是蔬菜為原料的清淡湯。濃湯放有肉類或海鮮,加奶油調製的很稠輔菜、湯可同時就著麵包吃。

主菜有魚、豬肉、牛肉、羊肉、雞肉等,是一個拚裝盤,你點的主菜是一般搭配有蔬菜和主食。每道菜的配料都寫在菜單裏的。西餐上主菜盤子很大,菜量非常足。飯量小的人吃不完。

有一點要特別說明的是老外吃海鮮要用單獨的餐具,在前菜中點海鮮,比如牡蠣(Oysters)要用專用的小叉子,如果點蟹蝦等需要用手拿著吃的,要上洗手碗,吃完後要洗手。在海鮮餐廳和豪華餐廳海鮮作為一類主菜,菜單(Menu )中專有海鮮主菜(Seafood Entrees)係列,記住吃魚吃肉用不同的刀叉。

甜食常有冰淇淋(Ice Creams)、布丁(Pudding) 、派(Pies) 、奶酪蛋糕(Cheesecake)等。然後是咖啡或紅茶。至於水果,可上可不上。
