擺台規則(多圖)

擺台,出自法語詞Couvert,是指餐桌上用來進餐的所有物品(具體來講就是指餐具、杯,餐巾、餐盤,其他輔助餐具也可算在內)在台麵上的擺設。擺出一桌造型美觀的台麵,不僅為客人提供一個舒適的就餐場地和一套整潔的就餐用具,而且可為其帶來賞心悅目的藝術享受。這當然也是美食不可缺少的一部分。

西餐的餐具基本上使用金屬餐具,以刀、叉和匙三類為主。因食用的時間不同及菜肴種類不同,食用方式各異,使用的餐具在形狀大小上也有區別。我們來看看一日三餐的擺台規則:

早餐擺台:

 當晚宴中有魚和海鮮時,擺台應另放魚叉魚刀:

formal table setting

 

 

(above the plate. left to right): salt & pepper, dessert fork & spoon, water/wine glasses.
(plate row. left to right): fish fork, dinner fork, salad fork, napkin, rim soup plate, plate, salad knife, dinner knife, fish knife, soup spoon.

這些規則和知識無論在餐館還是在家裏都是通用的。在必要的時候可以做些靈活變通。

嚴肅跟貼 回複 悄悄話 最基本的規則是根據菜的道次從外到裏放置相應的刀叉勺,除甜點勺叉放在上麵
