栗之糖炒，本家常小食，世人慣食，不以為奇。然製菜之法，千奇百怪，務求至美。

藍婆糖炒栗子之法取料極簡，然食之香甜，令人難忘也。

栗大而圓者，肥美，浸以滾水，三刻後撈出。另取藍小泉利刀一把，順栗皮之紋理，重劃至內裏。十字為佳。

砂糖以溫水調和，入栗子，翻滾若幹次。 糖炒栗子，最倚火候。爐火燒至220攝氏度，倒入栗子，烤之。一盞茶後，翻之。 待糖色附著，關火煨之。觀色入琥珀，則糖炒栗子成矣。
