Fixing a part for a mixer. And a steam bread method

Fixing a part for a mixer.

----using sand cloth in less than 25 minutes, saved $25.

Background:

Mixer part names:

In KitchenAid, they sell this part, Spiral Dough Hook (#15) for $24.99,

it was rated as 1.4  (in scale of 1-5, 1 as the lowest,  5 as the highest, among 20 reviewers).

The story:

I bought a mixer from costco in November 3, 2022 and haven't used it for more than 3 times. At the end of November, this year, I found #15 Sprial Dough Hook could not be mounted on the shaft of the mixer motor. I called the KitchenAid (a brand from Whirlpool), after a long waiting, I was told that one year warranty was over, and they would do nothing about it. They kindly offered me a new one for $25 instead. I hung up the phone. It is manufacturer's (assembled in OH) fault and I did not find it in time.

The fact before it was fixed:

The inner diameter of the spiral dough hook was 12.54 mm:

The shaft of the mixer motor is 12.64 mm:

I'm not the person who could easily give up. I decided to try to fix it myself. I have three choices:

1. Using a rotary tool, with a small sand paper roll:

the sand paper roll (the lower one in the picture below):

2. Using a router (don't try your internet router please, I bet it won't work!) with a bit:

the router bit:

3. Manually, using a piece of sand cloth (emery cloth):

Since both the sand paper roll in the  rotary tool set and the router bit are not long enough and not easy to work with, I decided to use sand cloth.

Method:

1. Just cut sand cloth by 80x60 mm for each grit: 46, 80, 120, 180.

(The grit is a rating of the size of the abrasive particles embedded in the sandpaper. The higher the grit number, the finer the abrasive particles and the smoother the finish that can be achieved. The lower the grit number, the coarser the finish but quicker the material removal rate. 40 grit: Coarse.)

2. Roll the sand cloth into roll shape.

3. Rotate the sand cloth roll (grit 46) inside the Sprial Dough Hook for 2-3 minutes.:

Be careful, check the diameter from time to time, don't let the dameter be too large!

4. Repeat No. 3 with the sand cloth roll (grit 80).

Repeat: be careful, check the diameter from time to time, don't let the dameter be too large!

5. Repeat No. 3 with the sand cloth roll (grit 120).

Repeat: be careful, check the diameter from time to time, don't let the dameter be too large!

6. Repeat No. 3 with the sand cloth roll (grit 180).

Repeat: be careful, check the diameter from time to time, don't let the dameter be too large!

Finally, it is done. Now the inner diameter of the Spiral Dough Hook is 12.72 mm and it could be installed on the mixer motor:

So I saved $25 in less than 25 minutes.

 A steam bread method

ingredients:

dry yeast (from costco), 5-10 grams (My scale's accuracy is 5 grams):

sugar, 5 grams

flour (non bleached, King Arthur, costco), 550 grams

water, 290-300 grams (most likely it was 290 grams)

Method:

1. Add 5-10 grams of yeast (from costco) + 5 grams of sugar to a small bowl.

2. In the bowl, mix the yeast and sugar with a small amount of water (110°F or 43.3°C), stir them with a pair of chop sticks until they are dissolved.

3. Put the bowl in the warm zone of the range top with the control knob in the low to med position, in less than 10 minutes in summer and less than 20 minutes in winter, the yeast will raise.

4. Add 550 grams of flour (5 measuring cups (from a rice cooker)), 290 grams of water (110°F or 43.3°C) to the mixing bowl of the machine along with the yeast.

5. Use  #15, Spiral Dough Hook, at motor speed 2, it will take less than 4 minutes to make a dough.

or Use #14, Flat Beater, it will take less than 3 minutes to make a dough.

6. Put the dough in a container, on the warm zone of the range top, with setting at the low position (see item 3). I also put a cover on top of the container and if my container is made of metal, I would put a dish plate in between the container and the warm zone on the range top.

7. It will take around one hour for the dough to raise.

8. Put the small dough (plural, it is the same with singular) on a plate in the steaming pot, steam for 20 minutes.

9. Turn the burner off , let the pot stay on the burner of the range top for 5 minutes.

The end.
