Jean的 ”Orange Chiffon Cake“

Orange Chiffon Cake

Ingredients

2 cups cake flour

1 tsp salt

1 tbsp(table spoon) baking powder 

 

sift them together.

 

6 eggs yolk ( or 7 eggs yolk)

1 cup sugar

¾ cup orange juice ( or milk).

3 tbsp orange rind

½ cup vegetable oil

 

6 or 7 egg white

½ cup sugar

½ tsp cream of tartar ( optional)

 

beat egg yalks until light colored, then add 1 cup sugar, one spoon at a time.  Mix well together, then add orange juice or milk, then mix the flour mixture. Add orange rind +oil. Set aside. 

 

Beat egg white with cream of tartar until it rise and foaming. But not dry. Then add sugar one spoon at a time until its rise.

 

Fold the egg yolk mixture with egg white. Place the cake mixture in a tube pan( drop the tube pan couple of time on the table in order for the bubble come out).  Bake at 325c for 1 hour or1 hour and 15m.

 

Note: do not open the oven until the cake is done-prick the cake with a toothpick. And put it upside down until it cools down. 

 

那個蛋糕最重要的有幾點:1. 要用低筋或中筋麵粉,若是隻有普通麵粉也行-若效果好的話,用4 tbsp 玉米澱粉替代4tbsp 麵粉就行了。2, 把打好的蛋清攪拌進蛋黃液,不能劃圈,這是非常關鍵的,否則會消泡。3, 放到烤盤後一定要嗑幾下,把氣泡振出來。4,烤好後,要取出來倒扣,這樣不會塌陷。
