燙麵 (half-cooked dough)

Ingredients

All purpose Flour  2 c
boiling water  3/4 c
cold water 1/4 c
Some dry flour

Instructions

1. Place 1 cup flour into a large bowl.
2. pull in the hot boiling water. Mix with chopsticks.
3. Add the other 1 cup flour and mix.
4. Gradually adding cold water while stirring the flour with chopsticks
till you get large crumbs with few dry flours left on the bottom.
You don't have to use all the code water and adjust the amount
of the water added based on how it turns out.
5. Use hands to press and kneading to a large smooth dough.  
6. Cover the bowl and let it rest for 10-20 minutes.
