Catfish Nuggets 紅燒魚塊
Ingredients
2 lb catfish Nuggets
4 cloves garlic (mashed)
1/2 tsp salt
1/2 tsp white pepper (optional)
1/2 tsp ginger powder
1 cup all-purpose flour
3 tbsp vegetable oil
3/4 cup water
1 tbsp vinegar
1.5 tbsp Soy Sauce
1 tsp sugar
Instructions
1. in a large bowl, Mix catfish with 1/2 tsp salt, 1/2 tsp white pepper, 1/2 tsp ginger powder, and mashed garlic.
2. put 1 cup flour in a plate
3. put 3 tbsp vegetable oil in a large nonstick flat pan on medium high temperature.
3. wrap the nuggets by the flour and put them in the pan with SKIN SIDE UP!
4. cover the pan and turn the temperature to high till the bottom side become brown.
5. put 3/4 cup water, 1 tbsp vinegar, 1.5 tbsp Soy Sauce, 1 tsp sugar into the large bowl.
6. brown the other side of the nuggets.
7. turn off the stove.
8. drain the extra oil if you prefer and pull the mix in the large bowl over the fish nuggets in the pan.
9. turn the stove to medium and cover the pan for 5 min.
Tips
1. you could find the catfish nuggets in regular groceries or Walmart with grocery in the freezer near the frozen shrimp session.
2. Adjust the cook-top temperature to avoid the fish burned.
3. Fry the non-skin side first is the key since when the skin side meet the heat, it would curl up.
4. If you prefer fry-fish, you could turn down the temperature a little bit and fry the nuggets a little longer time to make sure they are fully cooked. And skip step 8 & 9.
