home made HeZi Wrappers 韭菜盒子皮

Ingredients

All purpose Flour  2 c

boiling water  3/4 c

cold water 1/4 c

Some dry flour 

Instructions

Place 1 cup flour into a large bowl. 
pull in the hot boiling water. Mix with chopsticks. 
Add the other 1 cup flour.

Gradully adding cold water while stirring the flour with chopsticks till you get large crumbs with few dry flour left on the bottom. You can adjust the amount of the water used based on how it turn out. 

 

Use hands to press and kneading to a large smooth dough.  Cover the bowl. You can prepare the filling. 

 

Cut the large dough into 3 eaqual medium doughs.

Pick one medium dough and roll it to a stick shape.

Cut it to 4 or small doughs. 

Sprinkle some dry flour on the surface  .

Put some dry flour on both sides of the small dough. 

Roll each small dough to a round wrapper with thin edge.
