意大利餐-BABBO

要說最受歡迎的西餐, 也許非意大利餐莫屬了。意餐取料廣泛, 雞鴨魚肉, 飛禽走獸,山珍海味,均可入菜。即使是麵食, 阿意也會做出來不同的花樣和味道。這種“通大路”的格局, 最適合多人的餐聚。三,五友朋相聚,甲愛牛排,乙嗜煎蚌,丙喜吃麵,丁想烤鵪鶉,走----吃意餐去。饕哥這些年來偶有國內的訪客。到了紐約,換換口味,吃法餐不飽,西班牙餐不盡興,墨西哥餐不夠檔次,老美牛排不太好消化,得---又得吃意餐了。

紐約的意大利餐館,多如過江之鯽。饕哥最喜歡的之一, 是位於格林威治村的BABBO.

BABBO 座落於華盛頓廣場公園附近的Waverly Place 110 號。法國藍的小樓配以白窗,店名的字體簡潔清爽,顏色黑紅相間,整個建築於淡淡的歐陸風格中透著紐約式的灑脫。進入店來, 隻見白桌黑椅, 奶油色的牆麵不見一幅畫作。簡約主義風格(Minimalist), 一覽無餘。

店主馬理奧 巴撻理(Mario Batali) 是個留小辮兒的大胖子。一眼望上去就象個專業人士。從上瞧下去, 會看到一雙塑料鞋。這是人家的招牌式形像。要的就是這個哏兒。這好比譚鑫培唱戲, 跑了一板, 這是大師玩新的了。不懂?那是您自己的不是。 要是王佩瑜也這麽著,對不起,丫頭你瘋了?

說起胖馬哥,人家可是個人物。不僅菜燒得特好,而且還是位行銷聖手。 生意好到什麽份上?訂位要提前兩個月。這店從98年開張後,獲獎無數。胖馬哥在喜歡意大利餐的“高級”粉絲中,名氣之大, 就是中國人的毛澤東。總統四年可換個新的,共產黨的總書記,八年也得換。唯有象譚老板,胖馬老板這樣的,沒得換。誰讓您好這一口呢?

饕哥最喜歡的BABBO頭台是 它的Pig Foot Milanese. 想想看, 能將豬腳堂而皇之入菜的, 除了俺們中餐或者德餐之外,就這胖馬哥了。這菜別處吃不到。 平常美食家多以“色香味”為標準,評價一道菜。 偌要饕哥來說,恐怕至少還得加上“奇,絕”二字。而這道菜,真的夠得上“色,香,味,奇,絕”。此菜的大致做法(猜的)是先將豬腳煮至五,六成熟,剔下皮肉剁成泥,加上各種佐料,攤成薄餅狀,入油鍋微煎至棕色,出鍋裝盤,配以Rice Beans 和Arugula. 切一塊送入口中,香濃溢彩,口感粘滑鬆脆。此時再抿一口香味濃鬱,口感柔滑的Ornellaia 紅酒,真有一種“春風十裏揚州路,漫卷珠簾總不如”的驚豔感覺。

BABBO 的主菜,不管點什麽,未曾讓饕哥失望過。但最讓饕哥稱道的特餐 (special) 是Sauteed Skate and Rock Shrimp。Skate 這種魚,寬翅長尾,形狀雖怪異,肉質卻鮮美異常。饕哥曾查過詞典,中文稱此魚為“鰩”。饕哥在海邊有座 度假屋,夏秋之際, 常在海邊用蚌肉釣Blue Fish 和Stripe Bass. 不請自來的常常就是Skate.小者二,三磅,大者六,七磅。當年饕哥曾在法國餐館見識過Skate,因此初釣得此魚時未被驚擾。Skate的兩翅十分肥碩,食者取其兩翅而烹之。鄰人有經過者,最初見饕哥在沙灘上收拾此魚,莫不驚異。饕哥免不得要講講紅燒或清蒸之法。BABBO這道菜也是饕哥忽悠的內容之一。眾鄰聽罷中餐的做法,多已覺得饕哥不得了,又聽到BABBO有這道菜而自己卻不知,身為見多識廣的紐約客,這是多麽掃興的事!於是呼,羞耷耷者有之,訕訕然者有之。更有那原本略懷譏諷之意的,此刻恨不得馬上換上遊泳衣了。

BABBO這道菜的做法與法國菜不同。它是帶骨烤的。保留翅骨的好處是翅麵平整而多汁,裝盤後但見魚翅金黃透棕,搭配的小蚌黑裏見黃,嫩蝦白內泛紅,又有點點青翠嫩葉點綴其間。皎潔的盤底微微澆入白葡萄酒熬成的金色的湯汁,不僅賞心悅目,更是細致鮮美。此刻佐以幹咧微酸的白葡萄酒,令人感到一種精雅的享受。

BABBO的酒單是遠近馳名的。意大利各地佳釀, 多有收藏。訪者若好此道,臨之更有收獲之感。

Thank you for sharing your experiences with us. Our recent visits to Telepan were a bit disappointing, but their Sunday brunch menu is pretty interesting. We have been to Blue Hill twice and enjoyed their food. We would love to have dinner or brunch at Blue Hill Stone Barns one day. BTW, if you haven't tried Del Posto, we highly recommend it.

It's the only place I wouldn't mind sitting and eatting at the bar when having no reservation. I once saw Batali came out of the kitchen wearing those fluffy orange slippers.

Liked your food choices be it high-end or mid-blow.
Since you liked Telepan, I am thinking you might also like Blue Hill... Spring is arriving, enjoy our city:)

It is not a high risk to try this one. I haven't met anyone who regrets dining at this restaurant. Please share your experiences with us once you try.
