挺像那麽回事的紅燒大排

俺對大學生活最親切美好的記憶要數那一毛五分錢的大排麵了。哈~~頗有出息的說。

今日重溫往日美好,仿製了食堂的紅燒大排。老公居然說除了稍偏甜外,味道口感基本可與當年食堂大排相媲美。看看俺是怎麽炮製出來的。

大排三塊

洗淨擦幹砸扁

浸在醬油+料酒+白胡椒粉製成的醃料裏半小時

雞蛋一個打成蛋液,倒些麵粉於盤中

將浸過的大排裹上蛋液再沾上麵粉

入平底熱油鍋裏煎熟(注:要煎熟)

盛出

另起油鍋爆香蔥薑後,加二勺金蘭醬油,二勺水,半大勺糖(糖偏多了)燒滾

再將煎好的大排倒入,稍微燒燒幹上上色
