冰桶甜酒釀

在家休感恩節大假,又上來灌水了!

成功地做了二次冰桶甜酒釀!想象一下吃上跟老媽做出一樣甜的酒釀,對菜鳥俺來說是有多麽大的成就感哪!這個步驟若不寫下來,將來失傳了可就太可惜了。俺的法寶就是冰桶和熱水袋。

正式步驟:

糯米6~8杯(電飯鍋杯)洗幹淨在水裏泡一夜。糯米瀝幹水後放蒸鍋裏大火蒸40分鍾。

糯米蒸好後用冷自來水(注意:在國內要用冷開水)衝衝鬆散,瀝幹後盛到有蓋的大容器裏。將二個甜酒藥球在碗裏用冷水花解開,倒入糯米中充分拌勻。拌好的糯米整整平,當中壓出個小坑,蓋上蓋子。

將容器和灌滿熱水的熱水袋放到冰桶裏。革命尚未成功,同誌仍需努力!每隔24小時換一次熱水袋,換3~4次後,革命就成功了。嚐嚐甜甜的甜酒釀吧!

俺可是試了二次,二次都成功了!看看出了這麽多的甜酒,再這麽發展下去俺打算開酒廠了!

再介紹一個後來發現的不用冰桶的辦法:地下室燒熱水暖氣的爐子上一直是很暖和的,可以利用起來。將拌好了酒藥的糯米飯盛在一個大的容器裏,再將容器放入一個有蓋子的大鍋裏(我是用的蒸鍋),然後將鍋直接放在爐子上,二天就好了。還有據說現在唐人街買的酒藥很凶,藥量要減少,大概一個球做六杯米。
