各個牌子的一杯鹽, 含sodium(純鹽)的量差別很大
算一下後, 1gallon液體, 需用75克左右的純鹽, 做2%含量的鹽水. 下麵以我家的用鹽為例:

On the box, it says 1/4 tsp or 0.7g has 280mg sodium
or 40% of the salt weight is pure sodium
1 cup of DCK salt = 48 tsp, 48*4*0.7 = 134gram of DCK salt
134*40%  = 54 gram of sodium
So to make 2% sodium solution, one  needs 1.4 cup of DCK salt, or 75gram of sodium.

1 gallon liquid = 3790gram

相差很大. 比如table salt, 1cup就有 113gram, 是上麵DCK salt的一倍多
用量杯1.4杯的話, 就會成為4%的鹽水
過去有人用我的方子, 沒注意用什麽鹽, 結果就鹹了

仔細看了您的換算，其實不需要這麽麻煩的。雖然各牌子鹽裏的添加物品種和比例有點區別，但占鹽總重量比例不到3%，相對於要處理的食品總重，可以忽略。

按需要處理的食材重量的5%加鹽，約等同於你上麵的換算的量。
