The video below is simpler and clear, if it is also good enough in explaining the fundamentals of AI, then it explains why AI acts the way you experienced it.

It is in essence just statistics. 

Unless AI transcends that, otherwise there will never be true intelligence.  But if this is the most basic upon which all AI is built, I can't see how it can be transcended.
