How to Do Time Lapse Shooting
You need to have a tripod, camera, intervalometer (if your camera does not have a built-in interval timer shooting function, but has an external shutter release socket), external power supply, light source, softwares.
1. Some DSRL cameras have an interval timer shooting function:
You could set up the interval (hour, minute, second), number of shots, time to start:

2. Some point and shoot cameras also have time lapse shooting function:
You need to set the shooting mode in the multiple shoot function (icon of three pictures):

3. If a camera has no time lapse function, but has an external shutter release socket,
you could use an intervalometer (JINTU brand, you could specify which camera, JINTU has different tips for different cameras):

LED 5000 K (sun light) 15 W for 100 W (I use two of them so there will be less shadow):

After setting up for Interval timer shooting, you could do you own things as long as you have enough room in your memory card and a juicy battery (if no external power supply attached.
