用Costco的新鮮大章魚包餃子

去年回家，吃了各種水餃，個人以為，新鮮的，還活的章魚包的餃子是我吃過的最好吃的水餃。
    
章魚餃子不像海膽餃子海腸餃子那麽金貴，價格親民，但卻不輸口感和味道，海膽和海腸餃子已經被炒成了當地人吃不起的網紅菜了。也比鮁魚餃子和黃花魚餃子多汁鮮美，因為章魚在煮熟時會收縮，會有湯汁析出，不隻是打進餡裏的蔥薑水和調料。
    
回來以後念念不忘，曾經買過超市的冷凍章魚回來山寨，全不是那味道，後來看到Costco有這種大章魚，雖然不能和遼南海邊鮮活的小章魚相比，但也已經令我喜出望外了。
    
1. 把章魚洗幹淨，然後切成小粒，越小越好，愛吃就要有耐心。
    
2. 把肥一點的豬肉餡和章魚小粒放在一起，一比一的比例就好，用提前準備好的蔥薑水和醬油香油等自己喜歡的調味料一起打餡，到和圖三差不多的狀態就可以了，不能太稀了，會不好包。
    
3. 加入韭菜和油攪勻，再加入適量的鹽，就可以包了。餃子餡鹹淡不確定，可以挑一點點在碗裏，在微波爐裏打10秒鍾，然後嚐嚐，就不會出錯了。
    
最後一點，很重要，餃子開鍋點兩次水，餃子圓胖了就好，千萬不可煮過了，章魚就不軟嫩了。
