There are no laws that determine how long one must stay at the sponsor (employer) after green card approval. Therefore, it is confusing to some people. INS has never clarified this. That is why I said in my post "theoretically" However, you must have intention to stay at the sponsor (employer) during the whole green card process. You should not leave the employer immediately after GC approval without a good reason. Your intention matters when you later decide to get citizenship.
If you decide to quit the job after GC approval but not immediately after, you must give a reasonable explanation to the employer. What is reasonable is up for debate.
Changing job after 180 days of I485 is different: your I485 is moved to the new employer if you change your job after 180 days and your sponsorship is renewed at the new employer.
