I485 is based on the I140 filed by your employer. Therefore, technically, if you quit your job immediately after the approval I485, your employer can have your green card invoked. Without a green card, you can forget about citizenship.

On the other hand, if you can have yourself fired, then you keep your green card.

The general consensus is that you keep the same job for another 6 months after I485 approval before you quit.
