I remember you are over 21, so you have aged out, and that's problably why your parents had renewed E1, but your renewal was rejected (or not filed) Your situation are similar to those F2 and H4 dependent children turning 21 and have to change to a status of their own. Yet you overstayed without filing a COS. You can still try COS to F1, but chances are, you won't get approval and have to get visa stamp in your home country. No one can guarantee that you can get a visa abroad after USCIS denial.
