So if USCIS didn't realize my parents' leaving from USA, they will continute I-485 process, Do you think my parents need an interview for 485?
-I don't know, but it is possible.

if they will be scheduded an interview, how do I do for that?
-You can not do anything because your parents can not return and their I-485 will be denied with 100% in this case.

 regarding I-824s, do you mean my parents can still complete their I-485 application and get the green cards in China?
-Not I-485, but immigration visa, which equals to green card (your parents use it to enter US to become a green card holder.. It seems you don't know immigration law well and you may need to hire a lawyer to help you for the I-824 filing.
