Of course you can come back to USA any time. If you find a job in USA later, just apply for H-1 visa or O-1 visa (if your qualification is good enough, and I think your background is good because you want to apply for EB1A). If you apply for your GC now using EB1A, you may get your GC in one year around and then, you can go back to China for one to two years with the approved Reentry Document (similar to AP).
