It seems to me that this company that you worked for on this small job did not want to go through the normal procedure to pay you. Thus I guess they will not report this payment to you to IRS. Otherwise, they would have asked you for your social security number through the IRS W-9 form already. Did you ever completed that kind of form to this company? If not, then most likely they would not report this payment to you to IRS. So do not worry any more.
I used to have classmates from China who worked for small companies and were paid cash or check, but never as a vendor. thus they got the money safe.
However, if you did complete that kind of W-9 form with your social security number to that company, then you really need to worry because when Immigration evaluates your I-485, they will evaluate your tax returns over the years, they may or may not see this extra income, but you never know and it is risky.
Next time, you better ask your University to pay you for the service you provide to external parties. This way, it is totally legal and perfect for extra income. It is just like you work for a consulting company and are assigned to work for its clients. The clients pay your employer which is the consulting firm and your employer gives you some extra bonus.
