You are fine if
you get your green card before you leave your sponsor
or
you get an rfe not related to your employment verification letter
If you get an rfe for employment verification letter, you need to have a job offer or new employment verification letter. It doesn't matter if there is gap between your current job and your new job. However, you need to provide the EVL by the deadline specified on the rfe.
