It does not matter how many papers and presentations you did, or how many reviews you performed; it really matters whether your current work is in the scope of national interests.
NIW the value of your job you are doing, and the importance of you in this job. If you are emphasis on your achievement and qualification, you may apply EB1.
BTW, IO will evaluate all the evidence you submitted, not the evidence after your submission. Otherwise, the case will change forever.
