you should definately use AP. your H1B will stay valid as long as you don't have EAD. there is no direct relationship between AP and EAD. when you use AP, you don't even need to mention anything about your work or H1B. just show them your valid passport, AP. that's it. sometimes they may want to see your I485 receipt notice. but nothing else.
