Tax return forms are part of valid documents to show that you, who invited your parents, are in good financial standing in the US. You don't have to use tax return documents, if you can provide copy of your bank statement (past 3 months) and/or past 3 months of your pay stub.
Whichever one you send to your parents, you only need copies of them, not the originals. And should be full copies (e.g. all pages of your tax return).
I suggest you send your parents copies of all documents you can find, and label them according to your preference of order when showing them to the VO in China. And make sure your parents understand which documents are for financial proof, which are for status proof, etc.
